Veggie Kare-Kare! Classic favorite 'to. Lakas maka-weekend vibe. Kala mo ang hirap gawin, hindi pala! Thanks to Mama Sita's Recipes, sobrang bilis ko lang prinepare 'to, wala pang 30mins pero feel ko sobrang special ng lunch ko!

This recipe is good for 2 huge servings:

250g tofu
100g eggplant
50g sitaw
50g pechay
25g white onion
10g garlic
10g sesame oil

For the sauce:
1 pack Mama Sita's Kare-Kareng Gulay Mix
1 cup of water
8g PBFit (or any peanut butter)
4-5 drops stevia (I like my Kare-Kare a little sweet. If you are using sweetened peanut butter then no need to add this)
1tbsp soy sauce
2tsp mushroom powder

◾Airfry or bake the tofu and eggplant first. Season it with salt and pepper and coat with a little oil.
◾Blanch the sitaw and pechay. Set aside.
◾Heat pan and add oil. Sauté onion until translucent and add the garlic.
◾Add 1 cup of water in the pan and mushroom seasoning.
◾Once the water is boiled, add the Kare-Kare mix, soy sauce, salt and pepper.
◾The sauce will thicken up so that means it's done.
◾You can throw all veggies in the pan or arrange them na parang deconstructed kare-kare.

Best paired with rice and of course, The Good Choices vegan bagoong!!!!!
