If you love eating fried rice as much as we do, here's an easy recipe on how you can make the best Yang Chow fried rice using The Good Choices TOCINO and TOFU SCRAMBLE!
1 250 g pack The Good Choices TOCINO
1/2 teaspoon five spice powder
2 tablespoons anisado wine
2 tablespoons vegetable or peanut oil
1/4 cup onion, chopped
3 pcs dried shiitake mushrooms, soaked until tender and chopped
1 250 g pack The Good Choices TOFU SCRAMBLE, thawed
1 cup frozen mixed vegetables or 1/3 cup of each: green peas, corn kernel, and diced carrots
4 cups leftover white rice*
2 cups cabbage, chopped
1 teaspoon course sea salt or black salt
2 tablespoons sesame oil
1/3 cup spring onions, chopped
1. Cook the TOCINO together with five spice powder and anisado wine. This will give it a nice flavor similar to Chinese ham. Once cool, slice the TOCINO into small cubes.
2. Pre-heat oil in a wok or large skillet over high heat. Sauté onions and shiitake mushrooms. Add the TOFU SCRAMBLE and mixed vegetables and cook until the peas and carrots are tender.
3. Add the leftover rice, cabbage, and salt. Stir fry until ingredients are evenly mixed. Add the TOCINO cubes and garnish with sesame oil and spring onions.
* You could make fried rice from freshly cooked rice, but it's not likely going to have the right texture because it will be too moist. Leftover rice is ideal because it's drier and therefore, cooks great right in your skillet along with the other ingredients. Any moisture you need at all comes from the bit of oil and the veggies.
