The Good Choices Ph ADOBO Kebabs

So we made ADOBO Kebabs and we're sharing the recipe with you. Make this for your family and friends (don't let them know it's plant-based until after they've tasted it 😉) and for sure, they'll realize that eating meat-free is a joy rather than a hassle.

Ingredients
1 500 g pack The Good Choices ADOBO, thawed
1 227 g can @delmonte (or any brand you prefer) pineapple chunks, drained (reserve the juice)
1 red bell pepper, cut into 1-in pieces
1 green bell pepper, cut into 1-in pieces
1 zucchini, cut into 1-in pieces
1 eggplant, cut into 1-inch pieces
2 teaspoons cornstarch
12 pcs bamboo skewers
4 pcs tomatoes, sliced into wedges
2 pcs red onions, sliced into wedges

Procedure
1. Separate the ADOBO meat from the sauce. Mix the sauce, juice from the drained pineapples, and cornstarch in a bowl. Set aside.
2. Alternately thread sliced zucchini, eggplant, red bell pepper, green bell pepper, pineapple and ADOBO meat onto the skewers.
3. Pre-heat lightly oiled grill pan on medium heat. Cook skewers, turning occasionally, until vegetables are tender, around 10 to 15 minutes. Grill the sliced tomatoes and onions and season with salt and pepper.
4. Pour the ADOBO sauce and pineapple juice mixture in a saucepan. Bring to a boil and simmer until sauce thickens, around 3 to 5 minutes.
5. Baste the cooked ADOBO Kebabs with the sauce. Serve with turmeric rice and grilled onions and tomatoes.
