Plant-based Tinapa (Smoked Fish) Pasta

Start your Meatless Monday journey with this easy and healthy Plant-based Tinapa (smoked fish) Pasta recipe!

1 500 g pack spaghettini noodles, cooked al dente
1 bottle TGC Tinapa Flakes in Corn Oil
2 tablespoons olive oil
1/2 cup button mushrooms (you may use fresh or canned), sliced
2 tablespoons garlic, minced
1/4 cup green olives, sliced
1/4 cup black olives, sliced
1/4 cup capers
1 cup fresh tomatoes, diced
1 teaspoon rock salt
1/4 teaspoon black pepper
1 cup basil leaves, coursely chopped
Chili flakes (optional)
Nutritional yeast (optional)

1. Preheat olive oil in a large nonstick pan or wok on medium heat. Sauté mushrooms until some parts have browned. Add garlic and sauté until fragrant.
2. Add tinapa flakes (oil included), green olives, black olives, and capers. Season with salt and pepper and cook for 2 more minutes.
3. Add boiled spaghettini noodles and toss until sauce is evenly distributed. Add tomatoes and cook for 2 more minutes. Remove from flame then add basil leaves and chili flakes (optional). Toss pasta until all the ingredients are evenly mixed. Serve with nutritional yeast (optional).
