Ingredients

1 300 g pack TGC Picadillo, thawed
1 1/2 cups chickpea flour
1 1/4 cups cold @vitasoyph Milky soymilk
1 1/2 teaspoons black salt
1/4 teaspoon turmeric powder
1/8 teaspoon black pepper
4 pcs medium-sized eggplants, washed and dried
Oil for frying

Procedure

1. Roast the eggplants directly on open flame, turning occasionally until all the skin are evenly charred. Soak the roasted eggplants in water and carefully peel off all the skin. Drain and set aside.
2. Put chickpea flour, black salt, turmeric, black pepper, and soymilk in a bowl and mix thoroughly with a wire whisk.
3. Flatten one roasted eggplant in a small bowl with a fork and coat with about 1/2 cup chickpea batter.
4. Preheat oil on a non-stick pan over medium heat. Fry the chickpea batter-coated eggplant until its sides are able to hold its shape.
5. Top with 2 tablespoons TGC Picadillo and fry until the batter resembles a golden yellow color similar to scrambled egg. Drain cooked Tortang Talong on paper towels. Repeat with the rest of the eggplants. Serve with rice and ketchup.
