Mayonnaise (plant-based & vegan)
500g firm tofu
1/2 cup - 3/4 cup oil
2 tsp rock salt
2 tbsp mustard
1/4 cup brown sugar
Pinch of pepper
1 tbsp balsamic vinegar or lemon juice (optional)
Put all of the ingredients, in no particular order, in a blender or food processor and blend until smooth. Easy as pie!
