Here's a surefire way to make your kids eat vegetables – bake them with cheese (that's also made from vegetables!).
This Baked Cheesy Embutido with Broccoli and Cauliflower is loaded with lots of vegan cheese made from carrots and potatoes. It's super delicious and super easy to make!
1 700 g pack TGC Embutido, thawed and sliced into 1-inch pieces
2 tbsps oil for searing
3 cups broccoli florets
3 cups cauliflower florets
3 cups prepared vegan cheese

1. Preheat oven to 180°C (350°F).
2. Sear embutido slices on a nonstick pan over medium heat.
3. Line a baking dish with 1 cup vegan cheese. Arrange embutido, broccoli, and cauliflower. Top with remaining vegan cheese.
4. Bake for 30 minutes.
