Bacon Potato Salad

This bacon potato salad recipe is a sure hit for the whole family! Make it ahead and store it in the ref for up to a week.👌

4 potatoes, peeled and cubed
1 carrot, peeled and cubed
6 pcs TGC Bacon, cooked and crumbled
1 1/2 cups vegan mayonnaise (we got ours from The Vegan Grocer Ph)
1/2 cup celery, chopped
1/2 cup white onion, chopped
1/2 tsp black salt
1/4 tsp pepper
3 tablespoons nutritional yeast (optional)

1. Place potatoes and carrots in a large saucepan and cover with water. Bring to a boil. Reduce heat and cook covered for 15-20 minutes or until tender but not overcooked. Drain.
3. In a large bowl, combine rest of the remaining ingredients. Pour in the boiled potatoes and carrots and toss until evenly coated. Refrigerate for 1 hour or until chilled before serving.
